Herbs: Pleasing to Taste, See, and Smell

It's that time of year - dinners on the patio, standing around the grill, munching on our favorite summer recipes... Not only do fresh herbs enhance the taste of your food, but they can be extremely lovely when grown in pots and displayed. They are pleasant to look at, and they also smell fantastic. Still, many people are not sure how to use them, and are wary or unsure how to cook with them. If you are one of these "wary, cautious folks" when it comes to herbs, I'd like to challenge you to step out of your comfort zone this year and try a new twist on an old favorite by adding fresh herbs to your recipe. For example, try creating an herb rub made up of a little kosher salt, pepper, and fresh minced thyme. Spread it over your T-Bone steak or New York Strip before you grill, and voila! You've got a new twist on an old favorite that is anything but dull. And better yet - after you've grilled your steak, top it with herb butter for a decadent treat. Take a room-temperature half-stick of butter and mix in some fresh minced garlic, and more fresh minced thyme. Chill the butter while your meal is cooking and serve it on top of your steak. It is sure to be a new favorite that won't be forgotten. Other ideas include combining fresh sage with chicken - or mint with lamb - be creative and experiment. Have fun, eat well, and learn to love herbs!
